Waffles

I have tried pancakes, and those have all been super yummy! But Matthew and I were in a mood for waffles a couple weeks ago, so I made these. They turned out amazing, and they are gluten free, dairy free, and low in sugar! But I promise that they taste so good, and it gives you a healthy carb to eat.

Are you a breakfast for breakfast person, or breakfast for dinner?!

Low FODMAP Waffles:

  • 3/4 cup brown rice flour

  • 1/4 cup ground flaxseed meal

  • 1 tsp baking soda

  • 1/2 tsp cinnamon

  • 1/2 tsp nutmeg

  • Pinch of salt

  • Pinch of ginger

  • 2 eggs

  • 1 tsp vanilla extract

  • 1/2 cup pure maple syrup

  • 1/4 cup melted coconut butter

Bake on your waffle skillet until done. You can optionally add some peanut butter, bananas, and pure maple syrup on top for a tasty meal! Enjoy, and let me know how you like them!
