Baked Oatmeal

Who's ready to try a delicious baked oatmeal?!

Low FODMAP Peanut Butter Banana Baked Oatmeal:

  • 1 1/2 cups oats
  • 1/4 cup brown rice flour
  • 1 tbsp ground flax seed meal
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 2 ripe bananas 
  • 1/2 cup peanut butter
  • 1 tsp vanilla extract
  • 1/4 cup pure maple syrup
  • 1 large egg
  • 3/4 cup unsweetened almond milk

Bake at 350 degrees F. for 20-25 minutes in an 8x11 pan or 25-30 for a 9x9. 

Optional toppings:

  • Melted peanut butter
  • Maple Syrup
  • Fresh fruit of choice
