Am I the only person who craves treats more on the weekends?! I don't know what it is about the weekends, but it automatically makes me want to bake a delicious treat. Maybe it's because weekends are off a usual schedule, or maybe it's just because I love to bake and I have more time on the weekends. Either way, the struggle is real. And finding treats on a restricted eating plan makes it a bit harder. Because in reality, I just want to bake some thick, chocolatey, delicious brownies. But instead, I am continuing to choose to show myself love by not eating the foods that hurt me.
So I wanted to share this recipe that I made tonight, choosing to stay on track with my choices this weekend. The best part about this healthy choice is that they are a genuinely tasty treat, that is Low FODMAP, and guilt & pain free! Seriously guys, I'm a sweets girl, and these are awesome!
Dark Chocolate Peanut Butter Banana Cookies:
- 2 ripe bananas
- 2 eggs
- 1 tsp organic vanilla extract
- 2 tbsp ground flaxseed meal
- 1/2 cup brown rice flour
- 1/2 cup all-natural peanut butter
- 1/2 cup 80% organic dark chocolate chips
