Meatloaf

Meatloaf is not everyone’s favorite, but this one will be! It is light, sweet, and super tasty! I try not to eat too much red meat with my digestion issues. However, as a female, we need it sometimes. (Am I right?!)

So this is a great way to enjoy some red meat and bake a healthy and delicious dinner for the whole family. Plus, it is gluten free, dairy free, and it won’t just fall apart on you. Super easy to blend up and enjoy!

Low FODMAP Meatloaf:

  • 2 lbs grass fed ground beef

  • 4 medium eggs

  • 1/2 cup organic bbq sauce

  • 1 tbsp maple syrup

  • 2 tbsp ground flaxseed meal

  • 1 tsp baking powder

  • 1 tsp salt

  • 2 tsp pepper

  • 1 tsp savory season

  • 1 tsp basil

  • 1/4 cup almond milk (or nondairy milk of choice)

  • 1 tbsp grapeseed oil (or oil of choice)

Mix all of this together. Spread out in round baking pan. Optionally spread a light layer of bbq sauce with a tsp of brown sugar for extra flavor.

Bake at 400 for 45-50 minutes. Let me know how you like it!
