Cinnamon Bread

I am SOOO excited to share this recipe with you guys. Eating gluten free breads is a challenge because of how much I used to love normal bread. I find that I am picky about what I try and make or buy that is gluten free. But as I have been practicing in baking low FODMAP, I have grown to enjoy making recipes that also taste good. Let me say, THIS IS BY FAR MY FAVORITE RECIPE I HAVE MADE! It was so simple, and it tastes delicious!

Cinnamon has a lot of health benefits. First of all, it’s my favorite seasoning because it’s just really good. Second of all, its an anti-inflammatory. I try to implement a lot of foods that help with inflammation because of my IBS and Gastritis. It helps with the bloating and calming of my stomach. Another fun fact is that I have arthritis in my knees. So I tend to really push anti-inflammatory foods into my diet to naturally help these struggles.

This is a sweeter bread than others because of the sugar filling. But if you are someone who wants less sugar (although pure cane sugar is low FODMAP), you can still easily do just the bread part without the added filling. Then just sprinkle pure cinnamon on top and that is also super yummy! So here is the recipe. I hope you love it as much as I do!

Low FODMAP Cinnamon Bread:

  • 2 Cups brown rice flour

  • 2 tbsps ground flaxseed meal

  • 2 tsps baking powder

  • 2 tsps ground cinnamon

  • 1/4 tsp ground ginger

  • 1 tsp salt

  • 1/4 cup coconut butter softened

  • 1/2 cup almond milk

  • 2 eggs

  • 1 tsp vanilla extract

  • 1/2 cup pure cane sugar

  • 1/2 cup grapeseed oil (or other vegetable oil of your choice)

Cinnamon Filling:

  • 1/4 cup brown sugar

  • 2 tsps ground cinnamon

Directions:

Preheat oven to 350. Mix together dry ingredients first, and wet ingredients with sugar in a separate bowl. Then combine dry ingredients into the wet, and mix together until it is a nice smooth texture. Pour half of the dough into a bread pan. Take the cinnamon filling and sprinkle half of it over the first layer of dough. Then spread on the rest of the dough and sprinkle the rest of the filling on top. Bake for 40-45 minutes and enjoy!
