Pancakes Please

One of my favorite foods has always been pancakes. However, this fluffy tasty breakfast food is not light on the stomach of someone with IBS and Gastritis. So I have tried a couple different times to perfect a GF, DF, Low FODMAP pancake recipe that still tastes fluffy and delicious. Here it is folks!

Low FODMAP Pancakes:

  • 3 large eggs

  • 3 tbsp melted coconut oil

  • 3 tbsp almond milk

  • 1 1/2 tsp maple syrup

  • 1 tsp vanilla extract

  • 3 tbsp coconut flour

  • 1/3 cup ground flaxseed meal

  • 1 tsp baking powder

  • 1 tsp salt

  • 1 tsp cinnamon

  • 1 tsp nutmeg

Mix together and makes 4-8 pancakes depending on your choice of pancake size. Add some peanut butter, sliced bananas, and maple syrup on top, and enjoy! Let me know how you like them!
