Peanut Butter Dark Chocolate Bites
One of my favorite candies are Reeses. However, those have a lot of sugar and dairy that hurts me. Therefore, I decided to try something a little less painful, but still super tasty. While this treat isn’t entirely dairy free, dark chocolate in moderation is your best alternative treat. So it is great to help when you need that healthier sugar dose. Also, stevia is one sweetener that is low FODMAP, and it blends very similarly to powdered sugar. So I am really excited to share these with you, and I hope you like them as much as my husband and I do!
Low FODMAP Peanut Butter Dark Chocolate Bites:
1 cup dark chocolate chips
1/4 cup almond milk
Melt chocolate together with milk. Pour into pan, and then sit in freezer for ten minutes. I foiled my pan to help pull it out easier after it freezes.
1 cup organic peanut butter
1/4 cup coconut oil melted
1 tsp vanilla extract
1 cup stevia baking blend
Mix together till creamy. Pull cooled chocolate out of the freezer, and pour the peanut butter layer on top. Optionally add a few chopped chocolate chips on top. I blended a few up to get my chopped. Then freeze till it hardens, slice in 1” square bites, and enjoy!
