Blueberry Bread

I love bread. I love toast. And I love blueberries, because who doesn’t?! So I decided to put all of those together to make blueberry bread, and then I toasted it and spread some peanut butter on top. Super tasty, light on the gut for those who need that too, and also simple to make. GF & DF

Low FODMAP Blueberry Bread:

  • 1/2 cup coconut flour

  • 1/3 cup ground flaxseed meal

  • 1/4 cup brown rice flour

  • 2 tsp baking powder

  • 1/2 tsp salt

  • 1/4 cup cane sugar

  • 4 eggs

  • 1/2 cup coconut oil melted

  • 1/3 cup unsweetened almond milk

  • 1/2 cup blueberries (whole or chopped)

Bake at 350 for 25-30 minutes. Enjoy, and let me know how you liked it!
